Bean's Sister's Cheese Spread

This recipe is great for holidays and special get-togethers.


10 to 12 servings


6 large eggs
1 to 3 green onions, chopped
1 teaspoon paprika
1 (8 ounce) package shredded sharp Cheddar cheese
1 teaspoon garlic salt
1 teaspoon dried parsley
1/4 to 1/2 cup mayonnaise
assorted crackers


Place eggs in a saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and mash.

In a large bowl add mashed eggs, onions, paprika, cheese, garlic salt, and parsley; mix well. Add enough mayonnaise to make mixture spreadable. Serve with crackers.
