Peanut Butter Chocolate Chip Muffins

Delight your family and friends with these wonderful muffins made with peanut butter and chocolate chips – a warm treat.

2 cups baking mix (e.g. Original Bisquick™)
1 cup milk
1/2 cup granulated (white) sugar
2 eggs
1/2 cup chunky peanut butter
1/2 teaspoon vanilla extract
1 cup semi-sweet chocolate chips (6 ounce)


Preheat oven to 350°F (177°C). Prepare a muffin pan by placing baking cups in the cavities of a muffin pan or spray cavities with cooking spray.

In large bowl, stir baking mix, milk, sugar and eggs just until dry ingredients are moistened. In small bowl, mix peanut butter and vanilla just until blended; stir in chocolate chips. Stir into batter. Divide batter among muffin cups, filling each two-thirds full.

Bake for 24 minutes or until lightly browned. Remove from pan to cooling rack. Serve warm.
