Enjoy delicious homemade muffins made with pumpkin and cereal – a wonderful bread recipe.

12 servings

2 cups Fiber One® Raisin Bran Clusters® cereal
3/4 cup canned pumpkin (not pumpkin pie mix)
1/2 cup milk
1/4 cup vegetable oil
3 teaspoons vanilla extract
2 eggs
1 1/4 cups all-purpose flour
1/2 cup packed dark brown sugar
1 1/2 teaspoons baking powder
1 teaspoon pumpkin pie spice
3/4 cup raisins
2 tablespoons turbinado sugar (raw sugar)

Preheat oven to 400°F (204°C). Prepare a muffin pan by placing baking cups in the cavities or by coating the bottoms of the cavities with shortening.

Place cereal in resealable food-storage plastic bag; seal bag and crush with rolling pin or meat mallet (or crush in food processor). Set aside.

In large bowl, beat pumpkin, milk, oil, vanilla and eggs with wire whisk until well blended. Add flour, brown sugar, baking powder and pumpkin pie spice; stir just until dry ingredients are moistened. Stir in cereal and raisins. Divide batter evenly among muffin cups, filling full. Sprinkle with turbinado sugar.

Bake for 18 to 20 minutes or until toothpick inserted in center comes out clean. Cool 5 minutes; remove from pan to wire cooling rack. Serve warm or cool.
