18 servings

4 cups old-fashioned oats
1 cup chopped walnuts
1/2 cup packed brown sugar
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
1/3 cup vegetable oil
1/4 cup honey
2 tablespoons granulated (white) sugar
1 tablespoon spiced rum or 1/2 teaspoon rum extract
1 cup dried fruit bits
1/2 cup diced dried pineapple
1/4 cup diced candied orange peel

Preheat oven to 300°F (149°C). In large bowl, mix oats, walnuts, brown sugar, cinnamon, nutmeg and salt; set aside.

In 1-quart saucepan, heat oil, honey and granulated sugar to simmering, stirring constantly, until sugar is dissolved. Remove from heat; stir in rum. Pour hot liquid over oat mixture, stirring until dry ingredients are moistened. Spread in ungreased 15 x 10 x 1-inch pan.

Bake 30 minutes, stirring occasionally, or until golden brown. Cool completely in pan on wire cooling rack, about 30 minutes.
