Herbed Ham Frittata

Frittatas are Italian omelets. Instead of the French method of folding the ingredients into the cooked egg mixture, the filling ingredients of frittatas are mixed with the eggs and cooked without flipping. Not only are eggs one of the quickest and easiest foods to prepare, they're also one of the best sources of protein.

6 servings

6 eggs
3 egg whites
2 tablespoons chopped fresh chives
1 tablespoon chopped fresh parsley
1/2 teaspoon salt
1/8 teaspoon pepper
1 tablespoon butter or margarine
1/2 cup diced fully cooked ham
1/2 cup shredded Swiss cheese (2 ounces)

Beat eggs, egg whites, chives, parsley, salt and pepper in medium bowl with fork or wire whisk until well mixed.

Melt butter in ovenproof 10-inch nonstick skillet over medium heat. Pour egg mixture into hot skillet; sprinkle with ham and cheese. Reduce heat to medium-low. Cover and cook 8 to 10 minutes or until eggs are set.

Set oven control to broil. Broil frittata with top 4 to 5 inches from heat about 2 minutes or until light golden brown. Cut into wedges.
