Sausage Egg Bake

This hearty egg dish is wonderful for any meal of the day. Since it's easy to prepare and really versatile it's great for special occasions, too. For a change, use spicier sausage or substitute a flavored cheese blend.

1 pound bulk Italian sausage
2 (10.75 ounce) cans condensed cream of potato soup, undiluted
9 eggs
3/4 cup milk
1/4 teaspoon pepper


Preheat oven to 375°F (191°C). Lightly grease a 11 x 7-inch baking dish.

In a skillet, cook sausage over medium heat until no longer pink; drain. Stir in soup. In a bowl, beat eggs, milk and pepper; stir in sausage mixture. Transfer to prepared baking dish. Sprinkle with cheese.

Bake, uncovered, for 40 to 45 minutes or until a knife inserted near the center comes out clean.
