Potato Pancakes

A quick and easy recipe made from potatoes, onion, milk, and eggs. Serve for breakfast or brunch with butter and maple syrup.

Ingredients

3 cups peeled, diced raw potatoes
1 small onion, quartered
1/4 cup milk
2 large eggs
3 tablespoons all-purpose flour
1 teaspoon salt
1/4 teaspoon baking powder

Directions

Put all ingredients into blender or food processor; blend until all potatoes go through the blades, about 10 seconds. (Do not over blend as potatoes will liquefy.)

Pour small amounts on a hot, greased griddle and fry until brown on both sides, turning once.

Serve these pancakes immediately with butter and maple syrup.
