Chocolate Fudge Cupcakes

Deep, dark and delicious! Chocolate Fudge Cupcakes are always a hit, especially when topped by a favorite icing flavors such as Mocha Icing or Mocha Buttercream Icing.


24 standard cupcakes


2 cups all-purpose flour, unsifted
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup butter or margarine, room temperature
2 cups granulated (white) sugar
3 large eggs
1 teaspoon pure vanilla extract
1 1/2 cups milk
3 ounces unsweetened chocolate, melted


Preheat oven to 350°F (177°C). Prepare the muffin pan by placing baking cups in each cavity or by brushing the cavities with Pan Release or cooking spray.

Combine flour, baking powder, soda and salt. In large bowl, cream butter and sugar with electric mixer until light and fluffy. Add eggs, one at a time, and vanilla; beat thoroughly. Add flour mixture to creamed mixture alternately with milk, beating well after each addition. Add melted chocolate and beat thoroughly. Spoon batter into baking cups.

Bake for 20 to 25 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes in pan on wire cooling rack; remove and cool completely.
