Apple Pineapple Filling


4 cups baking apples, peeled and chopped
1/2 cup pineapple preserves
1/3 cup brown sugar, packed
2 tablespoons all-purpose flour
1 teaspoon coconut extract


In saucepan, combine apples, pineapple preserves, brown sugar and flour. Cook over medium heat for 3 minutes or until thick, stirring occasionally. Remove from heat and add coconut extract. Cool to room temperature.
