Homemade Mayonnaise

Use this homemade mayonnaise in salads or on sandwiches.


about 1 1/2 cups


2 egg yolks
2 teaspoons Dijon mustard
juice of 1 large lemon
1 cup olive or vegetable oil
salt and pepper


In a blender or food processor, whip the egg yolks, mustard, and lemon juice. Gradually add the oil in a thin, steady stream, beating until thick. Season with salt and pepper to taste.

Additional Information

This recipe contains raw eggs. It is recommended that pregnant women, young children, the elderly, and the infirm do not consume raw eggs.
