Black Forest Brownies

This recipe is easy, and you can always have the ingredients on hand.

Brownie Ingredients

1 1/3 cups all purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup butter or margarine
1 cup unsweetened baking cocoa powder
4 large eggs, beaten
2 cups granulated (white) sugar
1 1/2 teaspoon vanilla extract
1 teaspoon almond extract
1 cup maraschino cherries, chopped
1/2 cup chopped nuts

Chocolate Brownie Icing Ingredients

1/4 cup butter, room temperature
2 cups confectioners' (powdered) sugar
6 tablespoons baking cocoa
1/4 cup 2% milk
1 teaspoon vanilla extract
1/4 cup chopped nuts

Directions

Preheat oven to 350°F (177°C). Grease a 13 x 9-inch baking pan with Pan Release or cooking spray.

* In a bowl, combine flour, baking powder and salt. Set aside. In a large saucepan, melt butter. Remove from heat and stir in cocoa until smooth. Blend in eggs, sugar and extracts. Stir in flour mixture, cherries and nuts. Pour into prepared baking pan.

Bake for 30 to 35 minutes or until a toothpick inserted halfway between the edge and center comes out clean. Do not overbake. Center should be set (slightly sticky) but not dry.

Meanwhile, for icing, in a large bowl, combine the butter, confectioners' sugar, cocoa, milk and vanilla until smooth. Spread over hot brownies. Sprinkle with nuts, Cool on wire cooling rack before cutting into squares.

* Microwave method: In a microwave-safe bowl, melt butter; stir in cocoa until smooth. Cool slightly. In a large bowl, beat eggs and sugar. Stir in extracts and chocolate mixture. Combine flour, baking powder and salt; gradually add to chocolate mixture. Stir in cherries and nuts. Pour in prepared pan. Continue with step 3 above.
