Chewy Peanut Butter Blondies

If you love peanut butter and want to skip the chocolate, these blondies are for you!


16 brownies


1/2 cup peanut butter
1/3 cup butter or margarine, room temperature
2/3 cup granulated (white) sugar
1/2 cup packed brown sugar
2 large eggs
1/2 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt


Preheat oven to 350°F (177°C). Grease a 9-inch square baking pan using Pan Release or cooking spray.

In a medium bowl, cream together peanut butter and butter. Gradually blend in sugars, eggs, and vanilla. Mix until fluffy. Combine flour, baking powder, and salt. Stir into the peanut butter mixture until well blended. Spread batter into prepared pan.

Bake for 30 to 35 minutes or until the top springs back when touched. Do not overbake. Center should be set (slightly sticky) but not dry. Cool completely in pan on wire cooling rack. Cut into squares.
