Peanut Butter Chip Brownies

Brownie Ingredients

1 cup butter or margarine, room temperature
1 (3 ounce) package cream cheese, room temperature
2 cups granulated sugar
3 large eggs
1 teaspoon vanilla extract
1 cup all-purpose flour
3/4 cup unsweetened cocoa powder
1/2 teaspoon salt
1/4 teaspoon baking powder
1 2/3 cups (10 ounce package) peanut butter chips

Icing Ingredients

3 tablespoons butter or margarine, room temperature
3 tablespoons unsweetened cocoa powder
1 1/3 cups confectioners' (powdered) sugar
3/4 teaspoon vanilla extract
1 to 2 tablespoons milk


Preheat oven to 325°F (163°C). Grease a 13 x 9-inch baking pan using Pan Release or cooking spray.

In a large bowl, beat butter, cream cheese and sugar until fluffy. Beat in eggs and vanilla. Combine flour, cocoa, salt and baking powder. Gradually add to butter mixture, beating well. Stir in chips. Spread batter into prepared pan.

Bake 35 to 40 minutes or until brownies begin to pull away from sides of pan. Cool completely on wire rack.

In a bowl, beat butter or margarine and cocoa until blended. Gradually add powdered sugar and vanilla extract alternately with milk, beating to spreading consistency. Makes about 1 cup frosting. Spread brownies with icing. Cut into bars.
