Butter Cookies

This is a simple butter cookie that can be used in a cookie press, as a drop cookie or made into a roll and sliced. Just be sure to chill the dough thoroughly so it keeps its shape while baking.


3 dozen cookies


1 cup butter or margarine, room temperature
1/2 cup granulated (white) sugar
2 teaspoons vanilla extract
1 large egg
2 2/3 cups all-purpose flour
1/4 teaspoon salt


In a large mixing bowl, cream together butter, sugar and vanilla until light and fluffy. Beat in egg. Combine the flour and salt. Stir into the sugar mixture. Cover dough, and chill for at least one hour. Chill baking sheets.

Preheat oven to 400°F (204°C). Press dough out onto ungreased, chilled baking sheets.

Bake for 8 to 10 minutes or until lightly golden at the edges. Cool 2 minutes. Remove cookies from baking sheet and continue to cool on wire cooling rack.
