Buttery Spritz Cookies

These tender little cookies are very eye-catching on my Christmas cookie tray. The dough is easy to work with, so it's fun to make these into a variety of festive shapes.

7 dozen cookies

1 cup confectioners' (powdered) sugar
1 cup butter or margarine, room temperature
1 large egg
1 teaspoon vanilla extract
1/2 teaspoon almond extract
2 1/3 cups all-purpose flour
1/2 teaspoon salt

Preheat oven to 400°F (204°C).

In a large mixing bowl, combine powdered sugar, butter, egg, and extracts. Mix on medium speed until well blended. Gradually add flour and salt. Mix on low speed until blended. Fit a cookie press with the desired template and fill with dough. Press out cookies 1 inch apart onto ungreased baking sheets. Decorate cookies with sprinkles and colored sugar crystals, if desired.

Bake 6 to 8 minutes or until set or bottom edges are very lightly browned. Cool 2 minutes on wire cooling rack. Remove cookies from baking sheet and continue to cool on wire cooling rack.
