Christmas Trees

These buttery Christmas trees are often called spritz cookies because they are squirted through a cookie press. These cookies are fun to make and decorate.


6 to 7 dozen


2 1/4 cups all-purpose flour
1/4 teaspoon baking powder
1/4 teaspoon salt
1 cup shortening
3/4 cup granulated (white) sugar
1 large egg
1 teaspoon almond extract
green food coloring
green colored sugar


Preheat oven to 375°F (191°C). Sift together flour, baking powder and salt. Set aside.

In a large mixing bowl, cream together shortening and sugar until light and fluffy. Beat in egg and almond extract. Gradually blend in flour mixture and tint the mixture with a few drops of green food coloring. Mix well.

Place tree design plate on press and fill. Form cookies on ungreased baking sheets, 1 inch apart.

Bake for 10 to 12 minutes, or until set and lightly brown. Remove from oven and cool for 1 minute. Remove cookies from baking sheet and place on cooling rack until cool.


Place dragees — better known as "those little silver balls" —, cinnamon drops, or candied nonpareils as lights or bulbs on the trees before baking.
