Classic Spritz Cookies

Classic Spritz Cookies are an easy way to add variety to a tray of cookies. A cookie press lets you change disks to produce many different shapes.

7 to 8 dozen cookies

1 1/2 cups butter or margarine, room temperature
1 cup granulated (white) sugar
1 large egg
2 tablespoons milk
1 teaspoon vanilla extract
1/2 teaspoon almond extract
3 1/2 cups all-purpose flour
1 teaspoon baking powder

Preheat oven to 375°F (191°C). In a large mixing bowl, cream butter and sugar. Add egg, milk, vanilla, and almond extract to cream mixture. Beat well. Combine together flour and baking powder. Gradually add dry ingredients to creamed mixture, mixing to make a smooth dough. Do not chill.

Fit a cookie press with the desired template and fill with dough. Press out cookies 1 inch apart onto ungreased baking sheets.

Bake 10 to 12 minutes or until light golden brown. Cool 2 minutes on wire cooling rack. Remove cookies from baking sheet and place on wire cooling rack to cool.
