Coconut Spritz Cookies

These cookies offer a flavor variation everyone will love. Press the dough into the traditional bar shape, or choose other disks to add variety to your dessert tray.


6 to 7 dozen cookies


1 1/2 cups (3 sticks) butter or margarine, room temperature
1 cup granulated (white) sugar
1 large egg
3/4 cup sweetened flaked coconut*
1 teaspoon pure vanilla extract
3 1/4 cups all-purpose flour
1 teaspoon baking powder


Preheat oven to 375°F (191°C).

In a large mixing bowl, combine butter and sugar together. Beat at medium speed until light and fluffy. Beat in egg, coconut, and vanilla. Gradually add flour and baking powder to creamed mixture. Mix just until combined.

Shape dough into small logs and place dough into cookie press. Using desired disk, press cookies onto ungreased baking sheet.

Bake for 10 to 12 minutes or until edges are lightly browned. Remove from oven and cool on baking sheets for 1 minute. Remove from baking sheet and place on wire cooling rack until cool.

Additional Information

* Chop coconut if shredded coconut is substituted for flaked coconut.
