Fresh Orange Spritz Cookie

These wonderful pressed cookies get their delicious flavor from fresh squeezed orange juice and orange zest.


5 dozen cookies


1 cup butter, room temperature
1 cup granulated (white) sugar
1 egg yolk
2 tablespoons orange juice
2 1/4 cups all-purpose flour
1 tablespoon orange rind, finely chopped
1/4 cup pecans, finely chopped (optional)


Preheat oven to 350°F (177°C).

In mixer bowl, cream butter and sugar. Beat in egg and orange juice. Mix in flour, orange rind and optional pecans. Mix just until combined. Dough should be soft but not sticky. Shape dough into small logs and place in cookie press. Using desired disk, press shapes onto ungreased baking sheet.

Bake for 10 to 12 minutes or until edges are lightly browned. Cool 2 minutes on baking sheet on wire cooling rack. Remove from baking sheet and cool completely on wire cooling rack.
