Key Lime Spritz Cookies

These buttery key lime flavored pressed cookies can be covered in a lime icing if desired.


7 dozen cookies

Cookie Ingredients

1 cup butter or margarine, room temperature
3/4 cup granulated (white) sugar
1 large egg
1 teaspoon key lime peel or lime peel, finely shredded
2 teaspoons key lime juice or lime juice
2 1/2 cups all-purpose flour
1/4 teaspoon salt
1/4 teaspoon baking powder

Lime Icing Ingredients

3/4 cup confectioners' (powdered) sugar
1 1/2 teaspoons lime juice
2 to 3 teaspoons milk

Decoration Ingredients

green colored crystal sugar (optional)


Preheat oven to 400°F (204°C). In a large mixing bowl, combine butter, sugar. Beat on medium speed until creamy. Add egg and lime juice. Beat until blended. Add flour, salt and baking powder. Beat on low speed until blended (if dough gets too stiff, continue mixing by hand). Stir in lime peel. Fit a cookie press with the desired template and fill with unchilled dough. Press out cookies 1 inch apart onto ungreased baking sheets. Sprinkle with coarse sugar (optional).

Bake for 6 to 8 minutes or until edges are firm but not brown. Cool 2 minutes on wire cooling rack. Remove cookies from baking sheet and continue to cool on wire cooling rack.

If desired, stir together powdered sugar, lime juice and just enough milk to make a drizzling consistency. Tint with green food coloring if you like. After cookies have cooled drizzle with Lime Icing. Let stand 20 minutes or until set, or dip cookies in icing and top with green sprinkle sugar.
