Lime Meltaway Spritz

These sweet tangy lime cookies really melt in your mouth.

Cookie Ingredients

1 cup butter, room temperature
1/2 cup confectioners' (powdered) sugar
1 3/4 cups all-purpose flour
1/4 cup cornstarch
1 tablespoon grated lime peel
1/2 teaspoon vanilla extract
green food coloring, optional

Lime Glaze Ingredients

1/2 cup confectioners' (powdered) sugar
4 teaspoons lime juice
1/2 teaspoon grated lime peel


Preheat oven to 350°F (177°C).

In a large bowl, cream butter and confectioners' sugar until light and fluffy. Combine flour and cornstarch; gradually add to creamed mixture and mix well. Stir in lime peel and vanilla. Tint half of the dough green if desired.

Using a cookie press fitted with a ribbon disk, press dough into 12-inch-long strips 2-inches apart on ungreased baking sheets. Cut each strip into 3-inch pieces (do not separate pieces).

Bake for 8 to 10 minutes or until edges are lightly browned. Cool for 2 minutes before removing to wire cooling racks. Combine glaze ingredients; brush over cooled cookies. Let stand until set.
