Mint Spritz Cookies

These butter spritz cookies have the flavor of peppermint.


3/4 cup (1 1/2 sticks) butter or margarine, room temperature
1/3 cups granulated (white) sugar
2 large eggs
1 teaspoon vanilla extract
1/4 teaspoon peppermint extract
5 drops green food coloring
2 cups all-purpose flour
1/4 teaspoon salt


Preheat oven to 350°F (177°C).

In a large mixing bowl, combine butter and sugar. Beat on medium speed until creamy. Add eggs, extracts, and food coloring. Beat on medium speed until blended. Add flour and salt. Mix until blended.

Fit a cookie press with the desired template and fill with dough. Press out cookies 2 inches apart onto ungreased baking sheets.

Bake for 10 to 12 minutes or until golden brown. Cool 2 minutes on wire cooling rack. Remove cookies from baking sheet and continue to cool on wire cooling rack.
