5 dozen cookies

Cookie Ingredients

3/4 cup butter or margarine, room temperature
1/2 cup granulated (white) sugar
1 large egg
2 teaspoons orange peel, finely shredded
1/2 teaspoon vanilla extract
1 teaspoon baking powder
2 1/4 cups all-purpose flour
colored sugar, decorative candies, or nuts (optional)

Orange Icing Ingredients

1 cup confectioners' sugar, sifted
1/4 teaspoon vanilla extract
3 tablespoons orange juice

Preheat oven to 375°F (191°C).

In a large mixing bowl, cream butter and sugar at medium high speed until light and fluffy. Add egg, orange peel, vanilla and baking powder. Beat until well blended. Beat in as much flour as you can. Stir in any remaining flour by hand. Do not chill dough.

Shape dough into small logs and place dough in a cookie press. Using a desired disk, press shapes onto cool ungreased baking sheets. If desired decorate with colored sugar, decorative candies, or nuts.

Bake 10 to 12 minutes or until light golden brown. Remove from oven and cool on baking sheets for 2 minutes. Remove from baking sheet and place on wire rack until cool.

If desired, make orange icing. Stir together confectioners' sugar, vanilla extract and 3 tablespoons orange juice. Add enough additional orange juice to make of drizzling consistency. Drizzle icing over cookies. Leave on wire cooling rack until cookies cool and set.
