Butter Pecan Cookies
These crisp shortbread-like cookies are wonderful with a cup of coffee. They're delicious and so easy to make.
2 dozen (12 servings)
3/4 cup butter, softened
1 (3.4 ounce) package instant butterscotch pudding mix
1 1/4 cups all-purpose flour
1/2 cup chopped pecans
Preheat the oven to 375°F (191°C). Line baking sheet with cooking parchment paper or silicone baking mat or grease baking sheet.
In a small bowl, beat butter and pudding mix until smooth. Gradually beat in flour. Fold in pecans. Roll into 1 1/2-inch balls. Place 2 inch apart on prepared baking sheets; flatten to 1/2 inch with the bottom of a glass coated with cooking spray.
Bake for 10 to 13 minutes or until light golden brown. Remove from pans to wire cooling racks.
