Orange Pecan Ginger Cookies

3/4 cup butter or margarine, softened
1/2 cup granulated (white) sugar
1/2 cup packed brown sugar
1 tablespoon grated orange peel
1 tablespoon orange juice
1 egg
2 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup chopped pecans
1/4 cup chopped crystallized ginger
1/4 cup decorator sugar crystals


In large bowl, beat butter, granulated sugar and brown sugar with electric mixer on medium speed until light and fluffy. Beat in orange peel, orange juice and egg until blended. On low speed, beat in flour, baking powder and salt. Stir in pecans and ginger.

Divide dough in half. Shape each half into 10-inch log. Sprinkle 2 tablespoons of the sugar crystals on sheet of plastic wrap; roll 1 log in sugar to coat. Wrap log in plastic wrap. Repeat with remaining log and sugar crystals. Refrigerate 3 hours or until very firm.

Preheat the oven to 375°F (191°C). Cut logs into 1/4-inch slices. Place slices 2 inches apart on ungreased baking sheets.

Bake for 8 to 10 minutes or until edges start to brown and tops are light golden brown. Immediately remove from baking sheets to wire cooling racks. Cool completely, about 15 minutes.

Additional Information

These crisp, delicious cookies would be a welcome holiday treat. Stack 6 or 8 cookies, and tie with a pretty ribbon to present as a small gift.

For a special presentation, melt about 2/3 cup semi-sweet or milk chocolate chips in a long, narrow microwavable dish, such as a butter dish. Dip about 1/4 inch of one edge of each cookie into chocolate; place on wax paper about 40 minutes until set.
