Summer Dessert Pizza

Your family will enjoy this dessert anytime of the year, but it's especially refreshing during the hot months. You can use whatever fruits are in season.

Ingredients

1/4 cup butter or margarine, room temperature
1/2 cup granulated (white) sugar
1 large egg
1/4 teaspoon vanilla extract
1/4 teaspoon lemon extract
1 1/4 cups all-purpose flour
1/4 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
4 ounces cream cheese, room temperature
1/4 cup confectioners' (powdered) sugar
1 cup whipped topping
1 firm bananas. sliced
1 cup sliced fresh strawberries
1 (8 ounce) can mandarin oranges, drained
2 kiwifruit, peeled and thinly sliced
1/3 cup fresh blueberries

Glaze Ingredients

1/4 cup granulated (white) sugar
1/4 cup orange juice
1/4 cup water
2 teaspoons cornstarch

Directions

In a mixing bowl, cream butter and sugar; beat in egg and extracts. Combine flour, baking powder, baking soda and salt; add to creamed mixture. Beat well. Cover and chill for 30 minutes.

Preheat oven to 350°F (177°C). Grease a 12-inch or 14-inch pizza pan. Press dough into prepared pizza pan. Bake for 12 to 14 minutes or until light golden brown. Cool completely.

In a mixing bowl, beat cream cheese and powdered sugar until smooth. Add whipped topping; mix well. Spread over crust. Arrange fruit on top.

Combine glaze ingredients in a saucepan; bring to a boil, stirring constantly. Boil for 2 minutes or until thickened. Cool to room temperature, about 30 minutes. Brush over fruit.

Preparation Time: 35 minutes + chilling
Bake Time: 15 minutes + cooling

Storage

Store in refrigerator.
