Brownie Ice Cream Sandwiches

Fudgy brownies meet ice cream and sprinkles in these adorable ice cream sandwiches.

Ingredients

1 (1 pound 2.4 ounce) box brownie mix (e.g. Betty Crocker® Original
Supreme Premium)
water, vegetable oil and egg called for on brownie mix box
12 scoops ice cream, any flavor (3 cups)
red, white and blue candy sprinkles, if desired (e.g. Betty Crocker®)

Directions

Heat oven to 350°F/177°C (325°F/163°C for dark or nonstick pan). Place paper baking cup in each of 12 regular-size muffin cups, or spray muffin cups with baking spray with flour.

In medium bowl, mix brownie mix, water, oil and egg until well blended. Spoon into muffin cups.

Bake for 26 to 28 minutes or until toothpick inserted near edges comes out almost clean. Cool completely, about 30 minutes.

Remove paper baking cups. Cut brownies in half horizontally. Place 1 scoop (about 1/4 cup) ice cream between brownie halves. Sprinkle sides with jimmies. Freeze until ready to serve.
