Blueberry Lemon Shortbread Parfait

This parfait is very cool, light tasting and easy to prepare. A great flavor combination!


4 servings


1 cup shortbread cookie crumbs (about 5 ounces)
3 tablespoons butter or margarine, melted
1 cup purchased lemon curd
1 cup frozen whipped topping, thawed
1 pint (2 cups) fresh blueberries
1 teaspoon confectioners' (powdered) sugar


In a small bowl, combine cookie crumbs and melted butter; mix well

In each of 4 parfait glasses or dessert dishes. layer about 2 tablespoons cookie crumbs, 2 tablespoons lemon curd, 2 tablespoons whipped topping and 1/4 cup blueberries. Repeat layers. Refrigerate until serving.

Just before serving, sprinkle parfaits with powdered sugar.
