Luscious Lemon Parfait

Toasted coconut and lemon curd flavor light, sweet parfaits made with yogurt.


8 servings


1 quart vanilla lowfat yogurt
3/4 cup lemon curd, prepared
1 1/2 cups graham crackers, crushed
3/4 cup toasted coconut
1 (8 ounce) container frozen whipped topping, thawed


Into each 10-ounce parfait glass, layer: 1/3 cup yogurt; 2 tablespoons lemon curd; 2 tablespoons crushed graham crackers; 1 tablespoon coconut. Repeat process and serve.
