Irish Gingersnaps

These Gingersnap cookies are easy to make and tasty. A wonderful way to celebrate St. Patrick's Day.

3 dozen

Cookie Ingredients

1 cup granulated (white) sugar
1 large egg
1/4 teaspoon salt
3/4 cup shortening
2 cups all-purpose flour
1/2 teaspoon baking soda
1 teaspoon ground cloves
1 teaspoon ground ginger
1 teaspoon ground cinnamon

Confectioners' Sugar Glaze Ingredients

1 1/4 cups sifted confectioners' (powdered) sugar
3 tablespoons milk

Directions

Preheat oven to 350°F (177°C).

In a large mixing bowl, cream sugar, egg, salt and shortening together. Add flour, baking soda and spices; mix well. Roll teaspoonfuls of dough into balls; roll balls in sugar. Place on baking sheet 2 inches apart. Flatten slightly with the bottom of a glass or fork.

Bake for 5 to 6 minutes. Cool 2 minutes and remove from baking sheet. Continue to cool on wire cooling rack.

Combine confectioners' sugar with milk; mixing well. Drizzle cooled cookies, if desired.
