Browned Butter Frosting

This old-fashioned version of this favorite frosting is flavored with orange juice. Can be used with Apricot Layer Cake


enough to cover and fill a 9-inch layer cake


1/2 cup butter
3 1/2 to 4 cups confectioners' (powdered) sugar
1/3 cup orange juice
1/4 cup chopped pecans (optional)


In a small heavy saucepan, cook butter over medium heat for 5 to 7 minutes or until golden brown. Pour into a large bowl; beat in confectioners' sugar and orange juice. Frost and fill cake with frosting. Sprinkle top with pecans, if desired.
