Lemon Butter Icing

This lemon icing will accent the flavor of your cake.

Yield

enough to cover a 9-inch double layer cake

Ingredients

6 tablespoons butter or margarine, room temperature
4 cups confectioners' (powdered) sugar
3 tablespoons milk
1 tablespoon lemon juice
1 teaspoon lemon extract

Directions

In a mixing bowl, beat butter and sugar together until creamy. Add milk, lemon juice and extract; beat until smooth. Ice cake.
