Mint Buttercream Frosting


enough to cover and fill a 9-inch layer cake


1 pound confectioners' (powdered) sugar (approximately 4 cups)
1/2 cup butter or margarine, room temperature
1/8 teaspoon salt
1/2 teaspoon mint extract (peppermint or spearmint)
1 teaspoon vanilla extract
1/4 cup water
pink or green food coloring (optional)


In a large bowl, cream together butter, salt, extracts and 2 tablespoons water. Gradually beat in powdered sugar. Add pink or green food coloring until desired color is reached. Taste frosting and add up to 1/2 teaspoon more mint extract to reach desired taste. Add additional water until desired spreading consistency is reached.
