Pumpkin Pie IV

1 9-inch unbaked single pie crust
1 cup firmly packed brown sugar
2 tablespoons all-purpose flour
1 teaspoon pumpkin pie spice* or more to taste
1/2 teaspoon salt
1 large egg, lightly beaten
1 (15 ounce) can canned pumpkin
1 (12 ounce) can evaporated milk


Preheat oven to 375°F (191°C). Prepare single pie crust according to recipe directions, using a 9-inch pie plate; do not bake.

In a large bowl, mix brown sugar, flour, spices and salt. Stir in egg. Beat in pumpkin and evaporated milk until smooth. Pour into prepared pie crust.

Bake for 50 to 55 minutes or until knife inserted 2 inches from edge comes out clean.

Additional Information

* The following ingredients may be substituted for pumpkin pie spice: 1/2 teaspoon cinnamon, 1/4 teaspoon ginger, 1/4 teaspoon cloves, pinch of allspice.
