Celery and Apple Salad with Cider Vinaigrette

Twenty minutes and two steps is all it takes to toss together a colorful, tasty salad.

Dressing Ingredients

2 tablespoons apple cider or apple juice
1 tablespoon cider vinegar
2 teaspoons canola oil
2 teaspoons finely chopped shallots
1/2 teaspoon Dijon mustard
1/2 teaspoon honey
1/2 teaspoon salt

Salad Ingredients

2 cups chopped romaine lettuce
2 cups diagonally sliced celery
1/2 medium apple, unpeeled, sliced very thin (about 1 cup)
1/3 cup sweetened dried cranberries
2 tablespoons chopped walnuts
2 tablespoons crumbled bleu cheese


In small bowl, beat all dressing ingredients with whisk until blended; set aside.

In medium bowl, place lettuce, celery, apple and cranberries; toss with dressing. To serve, arrange salad on 4 plates. Sprinkle with walnuts and bleu cheese. Serve immediately.

Additional Information

Bleu cheese can be purchased already crumbled in the refrigerator section at the grocery store. Crumbled feta cheese would also be a great alternative.
