Cranberry Pistachio Salad with Champagne Vinaigrette

Celebrate in style with this delicious salad that is perfect for the holidays. Made with romaine lettuce, roasted red bell peppers, cranberries and pistachio nuts, then topped with a champagne vinaigrette made with champagne, oil, sugar and Dijon mustard.

Champagne Vinaigrette Ingredients

1/2 cup champagne or cider vinegar
1/4 cup vegetable oil
1 tablespoon granulated (white) sugar
1 tablespoon Dijon-style mustard

Salad Ingredients

1 small bunch romaine, torn into bite-size pieces (about 10 cups)
1 (7 ounce) jar roasted red bell peppers, dried and cut into 1/2-inch strips
1/2 cup dried cranberries
1/3 cup chopped pistachio nuts

Directions

Shake all vinaigrette ingredients in a tightly covered container. Toss desired amount of vinaigrette with salad ingredients.
