Orange Poppy Seed Salad

This salad with few ingredients gets plenty of "zip" from a quick and easy tangy dressing.

Salad Ingredients

1 head romaine lettuce, torn into bite-size pieces
2 medium oranges, peeled, sectioned and cut in half
2 kiwi fruit, peeled, sliced and cut in half
1/2 medium red onion, sliced

Classic Poppy Seed Dressing Ingredients

1/2 cup regular or reduced-fat mayonnaise or salad dressing
1/3 cup granulated (white) sugar
1/4 cup milk
2 tablespoons white vinegar*
1 tablespoon poppy seed

Directions

In large bowl, mix all salad ingredients.

In small bowl, mix all dressing ingredients until well blended. Pour over salad; toss to coat. Serve immediately.

Additional Information

To peel kiwi fruit: First cut about 1/8 inch off of one end. Next, slip a spoon between the fruit and the skin and move it so that it loosens the skin all the way around. Simply slip the peel off, and you have a perfectly round peeled kiwi fruit!

* Balsamic vinegar instead of the white vinegar gives the salad dressing a sweeter, richer flavor.
