Pomegranate and Greens Salad

Raspberry dressing provides a simple addition to this no-mess salad that's made using pomegranate, lettuce and spinach -- a perfect side dish.

Dressing Ingredients

1/4 cup granulated (white) sugar
1/2 teaspoon salt
1/4 teaspoon white pepper
1 garlic clove, minced
1/4 cup raspberry or white wine vinegar
2 tablespoons olive or vegetable oil

Salad Ingredients

6 cups torn fresh spinach
3 cups torn leaf lettuce
3 cups torn iceberg lettuce
1/2 cup pomegranate seeds


In small bowl or jar with tight-fitting lid, combine all dressing ingredients; mix well. If desired, refrigerate until serving time.

To serve, combine all salad ingredients in large salad bowl. Stir dressing; pour over salad. Toss gently to coat greens.
