Greek Chicken Salad

You may not think of yourself ss a culinary goddess, but what else could the person who so swiftly makes a classic Greek chicken salad like this be called?

4 small boneless skinless chicken breasts (1 pound)
1 (10 ounce) package mixed salad greens
3 plum tomatoes, cut into wedges
3/4 cup sliced peeled cucumbers
3/4 cup Kalamata olives, coarsely chopped
1/2 cup thinly sliced red onions
1/2 cup Greek vinaigrette dressing (e.g. ATHENOS)
1 (4 ounce) package crumbled feta cheese (e.g. ATHENOS Traditional)
2 tablespoons chopped fresh oregano


Heat grill to medium heat.

Grill chicken 6 to 8 minutes on each side or until done (165°F/74°C).

Cut chicken into thin strips. Toss with salad greens, tomatoes, cucumbers, olives and onions in large bowl.

Add dressing just before serving; mix lightly. Sprinkle with cheese and oregano.
