Coconut Sauce

Yield

about 2 1/2 cups

Ingredients

1 cup coconut cream*, such as Coco Lopez
1 cup milk
4 egg yolks
1 teaspoon vanilla extract
2 tablespoons white rum

Directions

In a saucepan bring coconut cream and milk to boil. Beat yolks in bowl and beat in 1/3 of milk mixture. Return remaining milk mixture to boil and beat in yolk mixture. Continue beating over medium heat until slightly thickened. Do not allow to boil. Strain sauce into bowl and let it cool. Stir in vanilla and rum.
