Broccoli and Red Pepper Toss

It's a toss this a healthy side or a delicious side? Both! Veggies in a light garlic dressing are scrumptious, while the broccoli serves up calcium for strong bones.

3 cups frozen broccoli florets
1/2 cup diced red bell pepper
1 tablespoon olive or sesame oil
1 clove garlic, finely chopped
1/2 teaspoon grated lemon peel
1 teaspoon lemon juice
1/4 teaspoon seasoned salt
1/8 teaspoon crushed red pepper flakes


Cook broccoli as directed on bag, adding bell pepper during last 2 minutes of cook time. Drain; remove broccoli mixture from saucepan.

In same saucepan, heat oil over medium heat. Add garlic; cook 1 to 2 minutes, stirring occasionally, until golden. Stir in lemon peel, lemon juice, seasoned salt and red pepper flakes. Return broccoli mixture to saucepan; toss to coat.

Additional Information

Besides coming from dairy foods, calcium comes from dark green veggies, such as broccoli. Bones need calcium to build and maintain their strength and integrity.
