Hearty Cabbage Soup

This good-for-you hearty soup is packed with delicious ingredients — cabbage, carrots, celery, green beans, cannellini beans, and tomatoes.

Yield

3 1/2 quarts (14 servings, 1 cup each)

Ingredients

4 cups chopped green cabbage
2 carrots, sliced
2 stalks celery, sliced
1 onion, chopped
1 (10 ounce) package frozen green beans, slightly thawed
1 (15.5 ounce) can cannellini beans, rinsed
1 1/2 quarts (6 cups) water
2 (14.5 ounce) cans chicken broth
2 cups canned crushed tomatoes, undrained
1 (0.7 ounce) envelope GOOD SEASONS Italian Dressing Mix

Directions

Combine ingredients in Dutch oven. Bring to boil on high heat; simmer on medium-low 30 minutes or until vegetables are tender, stirring occasionally.

This soup freezes well. Prepare as directed; cool completely. Ladle into 1 quart. freezer containers and freeze up to 3 months. Thaw in refrigerator before heating to serve.
