Dutch Oven Beef Stew

Perk up family favorite stew with green chiles.


6 servings


1 teaspoon oil
2 pounds boneless beef round steak, trimmed of fat, cut into 1-inch pieces
1 cup chopped onions
1 pound baking potatoes, cut into 1-inch cubes
2 cups frozen cut green beans, thawed
1 (4.5 ounce) can chopped green chiles
3 cups vegetable juice cocktail


Heat oil in Dutch oven over medium-high heat until hot. Add beef and onions; cook and stir 4 to 6 minutes or until beef is browned.

Add all remaining ingredients; mix well. Bring to a boil. Reduce heat to low; cover and simmer 1 1/2 to 2 hours or until beef and potatoes are tender.
